Copper Cowboy Saloon to Replace Coyote Ugly in Gaslamp

San Diego’s Gaslamp Quarter is about to trade neon signs for cowboy boots. A new concept called Copper Cowboy is moving into the long-vacant Coyote Ugly space at 820 Fifth Avenue inside the historic Keating Building, backed by a $1.5 million buildout and slated to open in January 2027.

The project comes from Alessandro Minutella, a familiar name in downtown San Diego dining who has previously run Romanissimo Cucina Italiana, Zama, and AKA Gaslamp. Minutella is partnering with chef Vincenzo Loverso through San Diego Dining Group, whose other properties include Greystone The Steakhouse, Osetra, and Osteria Panevino. Rounding out the ownership group is Dustin Noblitt, CEO of Hatco, the company behind the Stetson and Resistol hat brands, who is bringing a custom hat-making bar into the concept.

Copper Cowboy is being built as three experiences under one roof in the heart of Central San Diego: a restaurant serving a polished take on classic American cooking with Western touches, led by chef James Montejano (whose résumé includes the Four Seasons, L’Auberge Del Mar, and La Valencia Hotel); a live-music saloon styled after a Nashville honky-tonk, complete with an elevated stage and an interactive cocktail program; and Stets & Stone’s Hat Bar, where guests can design a one-of-a-kind cowboy hat to take home.

The space carries some history of its own. The Keating Building dates to 1890 and sits within the Gaslamp Quarter Historic District, added to the National Register of Historic Places in 1980. Coyote Ugly operated there from 2014 until it closed in 2020, and the storefront has sat largely dormant since. Designer Greg Mueller of Tucker Sadler Architects is overseeing the buildout, which leans on warm wood floors, exposed brick, tan leather seating, and a stamped copper ceiling that gives the concept its name.

For downtown San Diego, the project is a notable bet on nightlife and hospitality in a corridor that has seen plenty of turnover since the pandemic. A $1.5 million investment and a three-in-one concept signal real confidence in Gaslamp Quarter foot traffic heading into 2027, and it is one more reason locals and visitors alike may find themselves back downtown this winter.
