A new kind of sushi counter just opened its doors at the gateway to Solana Beach’s Cedros Design District, and it’s betting that a great roll and a great playlist go hand in hand. Encore Sushi celebrated its grand opening on Friday, October 23, with a Solana Beach Chamber of Commerce ribbon-cutting at 112 S. Cedros Ave., just steps from the Belly Up Tavern.
Chef James La, who cuts every piece of sushi to order at the bar, teamed up with partner Chris West to build a 1,700-square-foot, 42-seat space that doubles as a stage for the neighborhood’s creative energy. The concept leans hard into its Cedros Design District location: the restaurant plans to rotate work from local artists on its walls, and musicians passing through the district are welcome to sit in for impromptu sets. “Sushi is a live performance,” La said of the approach, while West described Encore as “the first stop where a night on Cedros begins.”
The menu reads like a set list, with music-themed signature rolls that change based on the day’s catch alongside more traditional selections like bluefin tuna, chu-toro, New Zealand king salmon, Hokkaido scallop, and uni. Beer, wine, and sake round out the drink list, and a daily happy hour runs from 3 to 5:30 p.m. for dine-in guests Tuesday through Sunday. The restaurant is open Tuesday through Thursday from 3 to 9 p.m., Friday and Saturday from noon to 10 p.m., and Sunday from noon to 9 p.m., with Mondays off. Private parties of up to 50 guests, including full restaurant buyouts, are also available.
For North County San Diego diners, the timing is notable: Cedros Design District has steadily built a reputation as a destination for independent shops, galleries, and restaurants rather than chains, and a new sit-down spot anchoring its entrance gives visitors another reason to park once and wander the whole strip. Solana Beach business owners have long pointed to that kind of foot-traffic spillover as one of the neighborhood’s biggest advantages over strip-mall competitors elsewhere in the county.
