San Diego’s Gaslamp Quarter is about to trade one kind of nightlife reputation for another. Copper Cowboy, a new Western-themed restaurant, live-music saloon, and custom hat shop, is moving into the historic Keating Building at 820 Fifth Avenue in downtown San Diego — the same storefront that housed Coyote Ugly from 2014 until it closed in 2020.
The roughly $1.5 million buildout is backed by Alessandro Minutella, co-founder of San Diego Dining Group alongside chef Vincenzo Loverso, with the kitchen led by chef James Montejano, whose resume includes stints at the Four Seasons, L’Auberge Del Mar, La Valencia Hotel, and the Mina Group. Local firm Tucker Sadler Architects is handling the design, aiming for warm wood floors, exposed brick, tan leather seating, and a stamped copper ceiling that feels more like a well-worn ranch house than a dance club.
The concept leans into what the team calls a “Nashville honky-tonk with a San Diego twist” — a saloon built around an elevated stage for regular live music, an interactive cocktail program, and a full restaurant menu offering a polished spin on classic American and Western cooking. Tucked inside will be Stets & Stone’s Hat Bar, a custom cowboy-hat-making counter run by Dustin Noblitt, owner and CEO of Hatco, where guests can design their own hat on the spot.
The developers have been upfront that Copper Cowboy isn’t trying to recreate Coyote Ugly’s bar-top dancing era. Instead, it’s chasing the same prime downtown foot traffic with a food-and-entertainment package built to keep guests in their seats longer — a welcome bet for a Fifth Avenue corridor that has seen plenty of restaurant and nightlife turnover since 2020.
A January 2027 opening is planned, giving the team a few months to finish construction and licensing inside one of the Gaslamp Quarter’s most recognizable historic buildings. For San Diego’s hospitality scene, it’s another signal that operators still see long-term value in downtown’s entertainment district, even as diners increasingly look for experience-driven venues rather than a simple bar.
